How to Make Lychee Jelly for Bubble Tea

  1. Ingredients:
    • 1 can of lychees in syrup
    • 1 packet of agar-agar powder (or gelatin if preferred)
    • Water
    • Sugar (optional, depending on sweetness of lychee syrup)

  2. Instructions:
    1. Drain the lychees from the can and reserve the syrup.
    2. Cut the lychees into small, bite-sized pieces.
    3. In a saucepan, combine the lychee syrup with water (as per agar-agar packet instructions) and bring to a boil.
    4. Add the agar-agar powder to the saucepan and stir continuously until it dissolves completely.
    5. Let the mixture simmer for a few minutes, then add sugar to taste if desired.
    6. Remove the saucepan from heat and add the lychee pieces, stirring gently to mix them in.
    7. Pour the mixture into a shallow dish and let it cool and set in the refrigerator for at least 2-3 hours or overnight.
    8. Once set, cut the jelly into small cubes and they are ready to be added to your bubble tea!
